Given your dog's history with Exocrine Pancreatic Insufficiency and previous intestinal surgeries, it's completely understandable to be concerned about her eating something like pizza. Pizza can be high in fat and may contain ingredients that could be problematic for her condition.

There are a few things you should keep an eye on:

Firstly, watch for any signs of digestive upset, such as vomiting, diarrhea, or abdominal discomfort. These symptoms could suggest that the pizza isn't agreeing with her system.

Secondly, be aware of the risk of pancreatitis, which can be triggered by high-fat foods, particularly in dogs with EPI. Symptoms to watch for include lethargy, loss of appetite, or abdominal pain.

Lastly, considering her surgical history, it's important to be vigilant for any signs of obstruction. This could manifest as vomiting, a lack of bowel movements, or bloating.

Since it's been an hour and she hasn't shown any symptoms yet, continue to monitor her closely. If you notice any concerning signs, it would be wise to consult your veterinarian promptly.

If you have any further questions, please feel free to ask. Thank you.
